Since its revival under the Bollinger family in 2005, Ayala has earned a reputation for producing fresh, vibrant wines that speak of precision and finesse. Like Bollinger, Ayala is located in the historic village of Aÿ and has been crafting wines of elegance and purity since 1860. As one of the original founding members of the Grandes Marques, Ayala boasts a rich heritage yet today it stands at the forefront of a modern, refined Champagne style.
What sets Ayala apart is its signature low-dosage, Chardonnay-driven style. With a minimalist approach in the cellar, namely stainless-steel fermentation, careful lees aging and no malolactic fermentation - the wines are crisp, linear, and terroir-expressive. The house owns prime vineyards and sources from top Crus across the region, allowing for tight control over quality and style.
